Coconut flour is a gluten free flour with high contents of protein, fiber and fat but low in carbohydrates. It is actually a byproduct of the coconut milk process and is a very nutrients dense flour.
Coconut flour is quite absorbent, therefore does not have the same property as wheat flour. Some tips to using coconut flour would be to sift it and to use less flour per recipe substitution.
Coconut flour makes for great pancakes, cookies, bread and tortilla wraps. If you are feeling experimental, you can even make macarons.
